This one is personal. Before SOS Counter had a proper storefront, the owner was baking sourdough out of her house and selling it to people who were lucky enough to know about it. That's the kind of origin story that tells you everything about how much heart goes into what this place is doing. Now operating in Franklin, SOS Counter has grown into a full bakery, pastry counter, and made-to-order kitchen that deserves way more attention than it's getting outside of the Cool Springs bubble.

The concept is simple and it works. Fresh sourdough baked every morning, hand-laminated pastries made daily, and a savory menu of sandwiches, salads, and sides all made to order with high-quality seasonal ingredients. The menu shifts a little with the seasons, which keeps things interesting and gives you a reason to keep coming back. The pastry case alone is worth a visit, and walking past it without ordering something is genuinely hard to do.

The savory menu is where it gets really exciting. The braised short rib dip with au jus, the chicken katsu on milk bread, the Italian hoagie on house sourdough, and the SOS burger on a sesame seed bun are all on the menu, and every single one of them looks incredible. The burger in particular has been on the radar and is high on the list for the next visit. These are not afterthought sandwiches thrown together to fill out a menu. This is a kitchen that cares about every single thing it puts out.

Nashville needs more of this. SOS Counter is exactly the kind of independently owned, chef-driven concept that this city should be rallying behind. Cool Springs is lucky to have it for now, but here's hoping the expansion into more Nashville neighborhoods is coming sooner rather than later.

My girlfriend made the trip out and came back raving about the Skinny Bread Club. Fresh, well built, and carried by the sourdough underneath everything else, which makes sense given that bread is what this whole place was built on. The kind of sandwich that reminds you how good a simple concept can be when the ingredients are actually quality. And knowing the person making the bread today is the same person who was baking it out of her house not that long ago makes it taste just a little bit better.
